Garlic Mushroom Chicken Thighs with butter-fried mushrooms, garlic, parsley and herbs. Serve with a simple green salad, rice, pasta, mashed cauliflower, mashed potatoes.
One of the hardest parts of adulthood is asking the question “What’s for dinner?” every single night, and having to answer it yourself. Ideally, a weeknight dinner should come together in less than a half-hour, be equal parts healthy and hearty, and require very minimal dish washing after the fact. This garlic mushroom chicken thigh recipe is the perfect dinner when you find it with minimal ingredients and no time.
First of all without waste of my time into favorite cut of chicken in buttery, garlicky, mushroomy, herby sauce. First step is Sear the seasoned chicken thighs in oil in a large Pan. Place the browned thighs off to the side and in the same pan, melt butter and cook the mushrooms until soft. Season and add in garlic and herbs including parsley, thyme, and rosemary. Throw the chicken back in and garnish with the herb of your own choice.

This is my favorite new recipe! I add a little flour and water when cooking the mushrooms, and it makes a thicker sauce. I then serve it over pasta- usually farfalle or fettucini.
I made this for as a drop-off meal for a couple of friends in need and also got great compliments!
How was this so simple, and how does it taste this good after only 20 minutes of cooking? I’m instantly obsessed. The thighs were perfect. The flavours! Are all of your recipes this good?!
I’ve made this many times since I discovered the recipe – and each time it just disappears!! Thanks for so many great dinners!
I made this with boneless chicken breasts cut into smaller pieces and it was phenomenal. It was printed for future use. 🙂
